Sebastian & Co Fine Meats is boutique butcher shop tucked away in Dundarave, West Vancouver. We opened our doors in 2007 to a few local customers who stumbled across us. Business was slow to start, and we were nervous! Slowly but surely, word started to spread about our unique, old-fashioned approach to butchery, and after a few food writers took interest, our little local business started to draw customers from all over the Lower Mainland. Today, we have regulars who honor us with fighting hours of traffic or long ferry rides to stock up on organic and naturally raised local meat. In fact, we have customers from as far away as Singapore and Geneva who always make a point of coming in for their t-bone fix whenever they are in town. In the tradition of the old-fashioned butcher shop, owner Sebastian works with local farmers and makes almost everything in the shop from scratch. Taking great pains to ensure the meat is tender and flavorful, our steaks are dry-aged for 40 days. We make all our artisanal sausages from scratch, with freshly chopped herbs and no nitrates, preservatives or meat binders added. Sebastian smokes his own bacon, ham and other deli items, which are made from the meat he buys from farmers in BC and Alberta. As a trained professional chef, Sebastian whips up delicious and unusual house-made marinades to compliment, but not overshadow, the natural flavours of his meat.
